Cheesy Baked Eggplant Pizza

The toppings

tomato sauce

shredded or sliced mozzarella cheese

toppings (fresh spinach, pepperoni, green pepper, Canadian bacon, etc.)
Instructions
- Preheat the oven to 350°F.
- Press each slice of eggplant with paper towels to remove excess moisture.
- Dip eggplant slices in egg whites, then coat with breadcrumbs.
- Place on a baking sheet and drizzle with a little olive oil.
- Bake for 10 minutes until crisp on one side, then turn over and drizzle with olive oil again.
- Bake for another 5-8 minutes.
- Top each slice with tomato sauce, cheese, and desired toppings.
- Bake for an additional 5-10 minutes until cheese is melted.
