Instructions
- Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Arrange the eggplant slices on the baking sheet, brush with olive oil, and sprinkle with salt and pepper.
- Bake for about 15 minutes until the eggplant is soft and golden.
- Spread marinara sauce on each eggplant slice, sprinkle with mozzarella cheese, and add Italian seasoning and pepperoni.
- Set the oven to broil and return the eggplant pizza to the oven, broiling for about 5 minutes until the cheese is melted and slightly browned.
