Ingredients

The base

  • 1 lb Eggplant
  • 2 tbsp Olive oil
  • ¼ tsp Sea salt
  • tsp Black pepper

The toppings

  • ½ cup Marinara sauce
  • cups Mozzarella cheese (shredded)
  • 1 tsp Italian seasoning
  • 1 oz Mini pepperoni slices

Instructions

  1. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Arrange the eggplant slices on the baking sheet, brush with olive oil, and sprinkle with salt and pepper.
  3. Bake for about 15 minutes until the eggplant is soft and golden.
  4. Spread marinara sauce on each eggplant slice, sprinkle with mozzarella cheese, and add Italian seasoning and pepperoni.
  5. Set the oven to broil and return the eggplant pizza to the oven, broiling for about 5 minutes until the cheese is melted and slightly browned.
