Ingredients

The eggplant base

  • 1 medium eggplant

The toppings

  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • to taste salt
  • to taste pepper
  • ½ cup tomato sauce
  • 2 tbsp grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • for garnish fresh chopped basil or parsley

Instructions

  1. Slice the eggplant into 12 half-inch slices and sprinkle with salt. Let sit for 20-30 minutes to draw out moisture.
  2. Preheat the oven to 425°F.
  3. Place a wire rack on a rimmed baking sheet and arrange the eggplant slices on top.
  4. Brush olive oil over the eggplant and season with oregano, garlic powder, and pepper.
  5. Bake the eggplant for 15 minutes, flip, and bake for another 10-15 minutes until tender.
  6. Top each slice with tomato sauce, Parmesan cheese, and mozzarella cheese.
  7. Bake for an additional 10-15 minutes until the cheese is melted.
