Instructions
- Prep all ingredients including dicing the onion and crushing the garlic.
- Season the pork chunks with salt and pepper.
- Heat the oil in a Dutch oven and brown the meat on all sides for 10 to 15 minutes.
- Add onion, garlic, lime juice, chili powder, oregano, cumin, and enough chicken broth to mostly cover the meat.
- Bring to a boil, then reduce heat and simmer covered for 2 to 2½ hours until the meat is tender.
- Preheat the oven to 400°F and prepare a baking sheet with foil.
- Shred the meat and spread it on the baking sheet, drizzling with some cooking liquid.
- Bake for 30 minutes, adding more broth and stirring to achieve desired crispiness.
