Easy Carnitas

Ingredients

The meat

  • 4-6 pound pork shoulder roast

The cooking fat

  • ¼ cup vegetable oil

The vegetables

  • 1 large onion
  • 1 clove garlic

The flavorings

  • 3 tablespoons lime juice
  • 1 tablespoon chili powder
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin

The liquid

  • 6-8 cups chicken broth

Seasoning

  • to taste salt and pepper

Instructions

  1. Prep all ingredients including dicing the onion and crushing the garlic.
  2. Season the pork chunks with salt and pepper.
  3. Heat the oil in a Dutch oven and brown the meat on all sides for 10 to 15 minutes.
  4. Add onion, garlic, lime juice, chili powder, oregano, cumin, and enough chicken broth to mostly cover the meat.
  5. Bring to a boil, then reduce heat and simmer covered for 2 to 2½ hours until the meat is tender.
  6. Preheat the oven to 400°F and prepare a baking sheet with foil.
  7. Shred the meat and spread it on the baking sheet, drizzling with some cooking liquid.
  8. Bake for 30 minutes, adding more broth and stirring to achieve desired crispiness.
