Spring Pasta with Spinach, Walnuts & Lemon

Ingredients

The pasta and greens

  • 1 pound pasta
  • 1 pound spinach

The sauce

  • 2 cups reserved pasta cooking liquid
  • ¼ cup butter
  • ¼ cup crème fraîche
  • ½ cup white wine
  • 1 lemon zest

The garnish

  • ½ cup toasted walnuts

Instructions

  1. Prepare a large bowl filled with cold water and add the greens to allow dirt to settle.
  2. Measure and prepare the other ingredients: walnuts, butter, white wine, and crème fraîche.
  3. Cook the pasta and add the greens to the pot once the pasta is cooked, cooking until the greens shrink.
  4. Drain the pasta and greens, reserving 2 cups of the cooking liquid.
  5. Make the sauce by whisking together the butter, crème fraîche, white wine, and reserved pasta cooking liquid.
  6. Combine the pasta, greens, toasted walnuts, and lemon zest in the sauce.
  7. Serve immediately.
