Instructions
- 1. Preheat the oven to 350°F and grease a 9x13 baking dish.
- 2. Heat the oil in a skillet and sauté the onion and bell pepper until slightly softened.
- 3. Remove from heat and stir in the soups, diced tomatoes, chili powder, oregano, and shredded chicken until combined.
- 4. Layer half of the tortilla triangles in the baking dish, followed by half of the chicken mixture and 1 cup of cheese.
- 5. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- 6. Bake uncovered for 35 to 40 minutes until the cheese is browned and bubbly.
- 7. Let cool slightly before serving.
