Ingredients

The base

  • 2 tablespoons unsalted butter
  • ½ cup finely chopped onion
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 8 ounces cream cheese, diced
  • 4 cups corn kernels
  • to taste salt
  • to taste pepper

The topping

  • 1 cup shredded cheddar cheese

Instructions

  1. 1. Preheat the oven to 350°F and spray a 9 x 9 baking dish with cooking spray.
  2. 2. Melt the butter in a large saucepan over medium heat.
  3. 3. Add the onion and cook for 5 minutes.
  4. 4. Sprinkle the flour over the vegetables and cook for another 2 minutes.
  5. 5. Whisk in the milk gradually until combined.
  6. 6. Add the cream cheese and cook until the mixture is smooth and thickened.
  7. 7. Stir in the corn and transfer the mixture to the prepared baking dish.
  8. 8. Season with salt and pepper, then top with shredded cheese.
  9. 9. Bake for 15 to 20 minutes until the cheese is bubbly.
