Extremely Cheesy Corn Casserole

Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium green chili pepper, chopped
  • 2 cloves garlic, finely chopped
  • 2 cans 15-oz. whole-kernel corn, drained
  • 16 ounces cream cheese
  • ¾ cup shredded mozzarella cheese
  • ¾ cup shredded cheddar cheese
  • ½ teaspoon salt
  • teaspoon ground black pepper
  • ½ cup bread crumbs
  • ½ cup fresh herbs (thyme, sage, or parsley), finely chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Melt the butter in a skillet over medium heat and stir-fry the garlic and chili pepper for 3 to 5 minutes.
  3. Add the corn, cream cheese, and half of the mozzarella and cheddar cheese to the skillet, stirring until melted.
  4. Season with salt and black pepper, then pour the mixture into a greased baking dish.
  5. Top with bread crumbs, remaining mozzarella cheese, and chopped herbs.
  6. Bake for 25 to 30 minutes until the cheese is melted and the top is crisp.
  7. Serve immediately, garnished with additional herbs or green onions.
