Ingredients

The base

  • ½ cup butter, melted
  • 2 units eggs
  • ounces cornbread mix
  • 15 ounces whole kernel corn, drained
  • 14¾ ounces creamed corn
  • 1 cup sour cream

The mix-ins

  • ½ cup cooked crumbled bacon
  • ¼ cup sliced green onions
  • 1 cup shredded cheddar cheese
  • ¼ cup diced red bell pepper
  • as needed none cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a baking dish with cooking spray.
  2. In a large bowl, combine melted butter, eggs, cornbread mix, corn kernels, creamed corn, and sour cream.
  3. Mix in the bacon, green onions, cheddar cheese, and red bell pepper until well combined.
  4. Pour the batter into the prepared baking dish.
  5. Bake for 45 minutes or until the top is lightly browned.
  6. Garnish with additional bacon, green onions, and bell pepper if desired, then serve.
