Jiffy Corn Casserole Ingredients

  • 1 box Jiffy Corn Muffin Mix (8.5 oz)
  • ½ cup unsalted butter
  • 1 cup sour cream
  • 2 large eggs
  • 1 can (15 oz) whole kernel corn, well drained
  • 1 can (15 oz) cream style corn

Corn Casserole from Scratch Ingredients

  • ½ cup unbleached all-purpose flour
  • ½ cup fine cornmeal
  • ¼ cup granulated sugar
  • ¾ tsp salt
  • ½ tsp baking soda
  • 10 Tbsp unsalted butter
  • 2 large eggs
  • 1 cup sour cream
  • 1 can (15 oz) creamed corn
  • 1 can (15 oz) whole corn, well drained

Instructions

  1. Preheat the oven to 350°F and spray a baking dish with non-stick cooking spray.
  2. Melt the butter in a microwave-safe bowl and let it cool slightly.
  3. Mix in the sour cream and eggs until well combined.
  4. Add the corn kernels and cream corn, mixing thoroughly.
  5. Fold in the Jiffy muffin mix until just combined.
  6. Pour the mixture into the prepared baking dish and bake for 40 to 50 minutes until set.
