Instructions
- Preheat the oven to 350°F and spray a baking dish with non-stick cooking spray.
- Melt the butter in a microwave-safe bowl and let it cool slightly.
- Mix in the sour cream and eggs until well combined.
- Add the corn kernels and cream corn, mixing thoroughly.
- Fold in the Jiffy muffin mix until just combined.
- Pour the mixture into the prepared baking dish and bake for 40 to 50 minutes until set.
