Instructions
- Preheat the oven to 350°F and lightly oil a 2-quart baking dish.
- Melt the butter in a microwave-safe dish or on the stovetop.
- In a large bowl, mix the corn muffin mix, melted butter, sour cream, cream corn, drained corn kernels, whisked eggs, salt, and pepper (do not add cheese yet).
- Transfer the mixture to the baking dish and sprinkle with shredded cheddar cheese.
- Bake for 35-45 minutes or until the center is set and the top is golden.
- Remove from the oven and serve.
