Ingredients

  • ½ cup unsalted butter
  • 8 ounces vegetarian Jiffy corn muffin mix
  • ½ cup sour cream
  • 15 ounces cream-style corn
  • 15 ounces sweet golden corn kernels
  • 2 large eggs
  • ¼ teaspoon table salt
  • ¼ teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 350°F and lightly oil a 2-quart baking dish.
  2. Melt the butter in a microwave-safe dish or on the stovetop.
  3. In a large bowl, mix the corn muffin mix, melted butter, sour cream, cream corn, drained corn kernels, whisked eggs, salt, and pepper (do not add cheese yet).
  4. Transfer the mixture to the baking dish and sprinkle with shredded cheddar cheese.
  5. Bake for 35-45 minutes or until the center is set and the top is golden.
  6. Remove from the oven and serve.
