Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the corn muffin mix, corn kernels, creamed corn, sour cream, melted butter, salt, onion powder, garlic powder, and chili flakes.
- Stir until well combined, being careful not to overmix.
- Grease a 9x13-inch baking dish.
- Pour the corn mixture into the prepared baking dish and spread evenly.
- Bake for 35 minutes.
- Remove from the oven and sprinkle the vegan cheddar cheese on top.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted.
- Let cool for a few minutes, garnish with green onions, and serve.
