Ingredients

  • 1 package vegan corn muffin mix
  • 1 can corn kernels, drained
  • 1 can creamed corn
  • 1 ¼ cup vegan sour cream
  • ¼ cup melted vegan butter
  • 1 teaspoon salt
  • 1 teaspoon chili flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup vegan cheddar cheese, shredded
  • to taste chopped green onions, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the corn muffin mix, corn kernels, creamed corn, sour cream, melted butter, salt, onion powder, garlic powder, and chili flakes.
  3. Stir until well combined, being careful not to overmix.
  4. Grease a 9x13-inch baking dish.
  5. Pour the corn mixture into the prepared baking dish and spread evenly.
  6. Bake for 35 minutes.
  7. Remove from the oven and sprinkle the vegan cheddar cheese on top.
  8. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted.
  9. Let cool for a few minutes, garnish with green onions, and serve.
