Ingredients

The batter

  • 1 ½ cups yellow cornmeal
  • ¾ cup all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 ¼ cups sour cream
  • ¼ cup butter, melted
  • 1 can (14.75 ounces) cream style corn
  • 1 cup shredded cheddar cheese

For greasing

  • as needed none butter

Instructions

  1. Preheat the oven to 350°F and grease a 2-quart baking dish with butter.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs and add sour cream, then stir in melted butter.
  4. Combine the wet ingredients with the dry ingredients, then add the creamed corn and cheese.
  5. Mix until just combined and pour the mixture into the prepared baking dish.
  6. Bake for 42 to 48 minutes, or until a toothpick inserted in the center comes out mostly clean.
