Instructions
- 1. Preheat the oven to 350°F.
- 2. Grease a 9x13 inch baking pan with 1 tablespoon of melted butter.
- 3. In a mixing bowl, combine cornmeal, flour, baking powder, sweetener, and salt.
- 4. Add buttermilk, ¼ cup melted butter, eggs, Greek yogurt, and corn to the dry ingredients and stir until combined.
- 5. Pour the batter into the prepared baking dish.
- 6. Bake for 35-45 minutes or until a toothpick comes out clean.
- 7. Allow to cool before slicing and serving.
