Ingredients

  • 1 tablespoon butter, melted
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup sweetener or sugar
  • 2 large eggs
  • ½ cup buttermilk
  • ¼ cup butter, melted
  • ½ cup plain, non-fat Greek yogurt or sour cream
  • 16 oz frozen corn, thawed and drained

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Grease a 9x13 inch baking pan with 1 tablespoon of melted butter.
  3. 3. In a mixing bowl, combine cornmeal, flour, baking powder, sweetener, and salt.
  4. 4. Add buttermilk, ¼ cup melted butter, eggs, Greek yogurt, and corn to the dry ingredients and stir until combined.
  5. 5. Pour the batter into the prepared baking dish.
  6. 6. Bake for 35-45 minutes or until a toothpick comes out clean.
  7. 7. Allow to cool before slicing and serving.
