Ingredients

  • 8 tablespoons butter
  • 2 large eggs
  • ounces corn muffin mix
  • 15 ounces canned corn kernels
  • 14¾ ounces creamed corn
  • 2 teaspoons granulated sugar
  • 1 cup sour cream
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 teaspoons chopped herbs
  • as needed spray cooking spray

Instructions

  1. 1. Preheat the oven to 350°F and grease a baking dish.
  2. 2. In a large bowl, combine the butter, eggs, corn muffin mix, canned corn, creamed corn, sugar, sour cream, salt, and pepper until well mixed.
  3. 3. Pour the batter into the prepared baking dish and spread evenly.
  4. 4. Bake for 40-45 minutes until the top is golden brown and the center is set.
  5. 5. Let cool for 5-7 minutes, then sprinkle with fresh herbs if desired and serve.
