Ingredients

  • 1 loaf gluten-free bread, cut into 1" cubes
  • 5 large eggs
  • 2 cups lactose-free eggnog
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon cardamom
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • teaspoon clove
  • to taste none salt
  • ½ cup sliced almonds

Instructions

  1. Grease a 13x9 pan with cooking spray.
  2. Add the cubes of gluten-free bread to the baking dish.
  3. In a large bowl, whisk together the eggs, eggnog, maple syrup, vanilla, cinnamon, cardamom, nutmeg, ginger, clove, and salt until smooth.
  4. Pour the egg mixture over the cubed bread and gently press down to ensure the bread is covered.
  5. Wrap the dish with foil and refrigerate overnight.
  6. Preheat the oven to 350°F.
  7. Remove the casserole from the refrigerator and sprinkle sliced almonds on top.
  8. Bake covered for 35 minutes, then uncover and bake for an additional 10 minutes until slightly browned.
  9. Optional: Garnish with powdered sugar and serve with maple syrup.
