Japanese Fruit Sandwich

Ingredients

The sandwich

  • 4 slices Shokupan Japanese bread
  • 2 tablespoons jam

The filling

  • 100 g whipping cream
  • 100 g mascarpone
  • 15 g sugar
  • 4 small strawberries
  • ½ kiwi fruit kiwi fruit
  • 1 small banana

Instructions

  1. Whip together whipping cream, mascarpone, and sugar until soft peaks form.
  2. Refrigerate the whipped mixture until needed.
  3. Prepare the fruits by washing strawberries, cutting off stems, and wiping them dry.
  4. Peel and slice the kiwi and banana into thick pieces.
  5. Spread jam on one side of each slice of bread.
  6. On a piece of cling wrap, spread a layer of whipped cream on the jam side of the bread.
  7. Arrange the fruits on top of the cream as desired.
  8. Add more whipped cream over the fruits and top with another slice of bread.
  9. Wrap the sandwich in cling wrap and mark the fruit layout for cutting.
  10. Refrigerate for at least 2 hours to set.
  11. Slice the sandwich with a sharp knife for a clean cut.
