Cheesy Cauliflower Rice & Broccoli Bake

Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Prepare cauliflower rice by shredding or grating it.
- Steam broccoli until slightly tender and set aside.
- In a skillet, heat oil and cook minced garlic until golden, then add arrowroot starch and whisk.
- Slowly add almond milk while whisking, then cook for a few minutes until slightly thickened.
- Blend the sauce with salt, pepper, nutritional yeast, and vegan parmesan until smooth.
- In a separate skillet, cook cauliflower rice with oil, salt, and pepper until softened.
- Combine steamed broccoli, cauliflower rice, and half of the vegan parmesan in a bowl.
- Add the sauce to the vegetable mixture and stir to combine.
- Transfer to the baking dish, top with remaining vegan parmesan, cover with foil, and bake for 20 minutes.
- Remove foil and bake at 400°F (190°C) for an additional 5-15 minutes until bubbly and golden.
- Let cool slightly before serving, optionally garnished with more vegan parmesan or parsley.
