Ingredients

The salad

  • 10 oz. spring mix salad
  • 4 large cooked beets, sliced
  • 3 oz. goat cheese, crumbled
  • ¾ cup pecans, chopped
  • 1 large asian pear, diced

The vinaigrette

  • 2 tablespoons stone ground mustard
  • 4 tablespoons vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon dry basil
  • teaspoons honey
  • to taste salt & pepper

Instructions

  1. Combine spring mix, beets, goat cheese, asian pear, and pecans in a large salad bowl.
  2. In a small bowl, mix mustard, vinegar, basil, honey, salt, and pepper.
  3. Gradually whisk in olive oil until the dressing is fully combined.
  4. Serve the salad with the dressing on the side.
