Ingredients

The salad

  • 10 oz fresh spring mix
  • 2 pieces pears, sliced
  • ½ cup dried cherries
  • ½ cup walnuts, chopped
  • ¼ cup shaved parmesan
  • ¼ cup sliced red onion

The balsamic vinaigrette

  • 1 clove garlic, minced
  • 1 tablespoon dijon mustard
  • ½ teaspoon dry rosemary
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • to taste salt & pepper

Instructions

  1. Prepare the balsamic vinaigrette by whisking all the vinaigrette ingredients together until emulsified.
  2. In a large bowl, combine the spring mix, sliced pears, dried cherries, chopped walnuts, shaved parmesan, and sliced red onion.
  3. Drizzle the salad with the dressing or serve it on the side.
