Ingredients

The filling

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ cup red bell pepper, diced
  • 1 tablespoon jalapeno, diced
  • 1 small sweet potato, cubed
  • 1 can black beans, drained
  • 3 ounces cream cheese
  • ½ teaspoon salt

The assembly

  • 2 whole whole wheat tortillas
  • 2 tablespoons fresh cilantro
  • 1 cup cherry tomatoes, halved

Instructions

  1. 1. Cook sweet potatoes in a microwave-safe bowl with a tablespoon of water for 3 minutes until tender.
  2. 2. Heat olive oil over medium heat and sauté onion, garlic, and red bell pepper until the onion is translucent.
  3. 3. Add black beans and sweet potato to the skillet and cook until heated through.
  4. 4. Stir in cream cheese and salt until well combined.
  5. 5. Scoop the mixture onto whole wheat tortillas and top with cilantro and cherry tomatoes.
