Sweet Potato and Black Bean Burritos

Instructions
- 1. Cook sweet potatoes in a microwave-safe bowl with a tablespoon of water for 3 minutes until tender.
- 2. Heat olive oil over medium heat and sauté onion, garlic, and red bell pepper until the onion is translucent.
- 3. Add black beans and sweet potato to the skillet and cook until heated through.
- 4. Stir in cream cheese and salt until well combined.
- 5. Scoop the mixture onto whole wheat tortillas and top with cilantro and cherry tomatoes.
