Skillet Sweet Potato Black Bean Burrito Bowls

Ingredients

Creamy Lime Dressing

  • ½ cup sour cream
  • ½ cup milk or buttermilk
  • ¼ cup finely chopped cilantro
  • 1 unit lime zest
  • 1 tablespoon lime juice
  • pinch unit salt

Burrito Mixture

  • 1 to 1 ½ pounds ground beef
  • ½ cup chopped onion
  • 2 cloves garlic, finely minced
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 medium sweet potato, peeled and small diced
  • 1 15-ounce can black beans, drained and rinsed
  • 2 cans (4-ounces each) green chiles, drained
  • 1 6-ounce can tomato paste
  • 2 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika

Rice/Toppings

  • Hot, cooked unit rice
  • Diced unit avocados
  • Shredded unit cheese
  • Chopped unit tomatoes
  • Lime wedges unit
  • Chopped unit cilantro

Instructions

  1. Prepare the dressing by mixing all dressing ingredients together and refrigerate.
  2. In a large skillet, cook ground beef with onion, garlic, salt, and pepper until the meat is no longer pink.
  3. Drain excess grease from the skillet.
  4. Add sweet potatoes, black beans, green chiles, tomato paste, chicken broth, chili powder, cumin, oregano, and paprika to the skillet.
  5. Stir to combine and bring to a simmer over medium heat.
  6. Cover and cook for 15-20 minutes until sweet potatoes are tender, stirring occasionally.
  7. Serve the burrito mixture over hot rice and top with dressing and desired toppings.
