Instructions
- Prepare the dressing by mixing all dressing ingredients together and refrigerate.
- In a large skillet, cook ground beef with onion, garlic, salt, and pepper until the meat is no longer pink.
- Drain excess grease from the skillet.
- Add sweet potatoes, black beans, green chiles, tomato paste, chicken broth, chili powder, cumin, oregano, and paprika to the skillet.
- Stir to combine and bring to a simmer over medium heat.
- Cover and cook for 15-20 minutes until sweet potatoes are tender, stirring occasionally.
- Serve the burrito mixture over hot rice and top with dressing and desired toppings.
