Instructions
- Sauté onions and garlic in olive oil until translucent.
- Add grated sweet potatoes, chili powder, cumin, and cayenne; cook covered for about 8-10 minutes until tender.
- Season with salt and pepper, stir in cilantro and lime juice.
- Warm black beans and sweet potato filling if refrigerated.
- Warm tortillas in a skillet for about 30 seconds.
- Assemble burritos by layering lettuce, beans, cheese, sweet potato filling, sour cream, and lime on a tortilla.
- Roll the tortilla into a burrito, halve, and serve.
