Sweet Potato and Black Bean Burritos

Ingredients

Sweet Potato Filling

  • cups finely chopped onion
  • 2 cloves garlic, minced
  • 3 to 4 tablespoons olive oil
  • 4 to 5 cups grated peeled sweet potato
  • 1 teaspoon chili powder
  • 1 to 2 teaspoons ground cumin
  • a generous pinch cayenne
  • to taste salt and ground black pepper
  • 1 cup finely minced cilantro
  • to taste fresh lime juice

For Assembly

  • 6 pieces burrito-sized tortillas
  • 1.5 cups cooked black beans
  • to taste Boston lettuce or other
  • to taste grated Cheddar or Monterey Jack
  • to taste sour cream
  • to taste fresh lime

Instructions

  1. Sauté onions and garlic in olive oil until translucent.
  2. Add grated sweet potatoes, chili powder, cumin, and cayenne; cook covered for about 8-10 minutes until tender.
  3. Season with salt and pepper, stir in cilantro and lime juice.
  4. Warm black beans and sweet potato filling if refrigerated.
  5. Warm tortillas in a skillet for about 30 seconds.
  6. Assemble burritos by layering lettuce, beans, cheese, sweet potato filling, sour cream, and lime on a tortilla.
  7. Roll the tortilla into a burrito, halve, and serve.
