10-Minute Broccoli Pesto

Ingredients

  • 2 cups Broccoli, chopped into small florets
  • ½ cup Italian Parsley, packed
  • 2 cloves Garlic
  • 1 unit Lemon, juiced and zested
  • cup Parmesan Cheese, freshly grated (or nutritional yeast for vegan)
  • cup Olive Oil
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper

Instructions

  1. Boil a large pot of water.
  2. Add the broccoli florets to the boiling water and cook for 30-40 seconds.
  3. Remove the broccoli and place it in an ice bath until cool.
  4. Pat the broccoli dry with a paper towel.
  5. Combine the broccoli and all other ingredients in a food processor or blender.
  6. Process until reaching your desired consistency.
  7. Taste and adjust seasonings as needed.
  8. Serve with your favorite dishes and enjoy!
