Ingredients

  • 8 ounces whole wheat penne
  • 2 cups baby broccoli
  • 1 cup oven roasted tomatoes
  • 1 teaspoon minced garlic
  • ¼ cup pesto
  • ¼ cup feta cheese
  • juice of ½ lemon
  • to taste fresh basil

Instructions

  1. Cook the penne according to package directions, adding the baby broccoli for the last 1-2 minutes.
  2. Drain the pasta and broccoli, then return to the pan over medium-high heat.
  3. Add the tomatoes and garlic to the pan, sautéing for 1-2 minutes until fragrant.
  4. Stir in the pesto, half of the feta, and the lemon juice, tossing until well combined.
  5. Remove from heat and add the basil, sprinkling with the remaining feta before serving.
