Ingredients

The dry ingredients

  • cup oat flour
  • 1 cup whole wheat pastry flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 pinch salt
  • ¼ cup brown sugar

The wet ingredients

  • ¼ cup melted coconut oil
  • ¾ cup almond milk
  • 1 tsp almond extract

The mix-ins

  • 1 cup fresh cherries (pitted and lightly chopped)
  • ¼ cup chopped dairy-free dark chocolate

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the dry ingredients: oat flour, whole wheat pastry flour, baking soda, baking powder, salt, and brown sugar.
  3. In a separate measuring cup, measure the almond milk, then add the melted coconut oil and almond extract, stirring to combine.
  4. Add the wet ingredients to the dry ingredients and whisk until just combined.
  5. Fold in the chopped cherries and ¾ of the dark chocolate until just combined.
  6. Spoon the mixture into 9 greased or paper-lined muffin tins, topping with the remaining chocolate.
  7. Bake for 23-25 minutes until golden brown and a toothpick comes out clean.
  8. Let the muffins rest in the pan for 5 minutes before transferring to a cooling rack.
  9. Serve warm or store in an airtight container.
