Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the dry ingredients: oat flour, whole wheat pastry flour, baking soda, baking powder, salt, and brown sugar.
- In a separate measuring cup, measure the almond milk, then add the melted coconut oil and almond extract, stirring to combine.
- Add the wet ingredients to the dry ingredients and whisk until just combined.
- Fold in the chopped cherries and ¾ of the dark chocolate until just combined.
- Spoon the mixture into 9 greased or paper-lined muffin tins, topping with the remaining chocolate.
- Bake for 23-25 minutes until golden brown and a toothpick comes out clean.
- Let the muffins rest in the pan for 5 minutes before transferring to a cooling rack.
- Serve warm or store in an airtight container.
