Instructions
- Preheat the oven to 350°F and prepare a muffin pan with nonstick cooking spray or paper liners.
- In a medium bowl, mix together the dry ingredients: flour, baking powder, baking soda, and salt.
- In a separate large bowl, mash the bananas until smooth and then mix in the melted coconut oil, applesauce, almond milk, beaten eggs, and honey until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring just until mixed to avoid over-mixing.
- Fold in the chopped cherries and chocolate chips.
- Divide the batter evenly among the muffin tins and top with additional chocolate chips.
- Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
- Cool for at least 5 minutes before transferring the muffins to a wire rack.
