Ingredients

Dry Ingredients

  • 2 cups Gluten Free 1-to-1 Baking Flour
  • ¼ tsp baking soda
  • 2 tsp baking powder
  • ½ tsp salt

Wet Ingredients

  • ¾ cup mashed bananas (about 2 medium)
  • ¼ cup coconut oil, melted
  • cup applesauce
  • cup almond milk
  • 2 large eggs, slightly beaten
  • 2 tbsp honey

Other Ingredients

  • ¾ cup chocolate chips
  • 1 cup fresh or frozen cherries, chopped in half

Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan with nonstick cooking spray or paper liners.
  2. In a medium bowl, mix together the dry ingredients: flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, mash the bananas until smooth and then mix in the melted coconut oil, applesauce, almond milk, beaten eggs, and honey until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until mixed to avoid over-mixing.
  5. Fold in the chopped cherries and chocolate chips.
  6. Divide the batter evenly among the muffin tins and top with additional chocolate chips.
  7. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool for at least 5 minutes before transferring the muffins to a wire rack.
