Quinoa Fried Rice

Ingredients

The base

  • 3 cups cooked quinoa

The vegetables and eggs

  • 2 large eggs
  • 1 large carrot
  • 4 cloves garlic
  • ½ cup frozen peas
  • 2 tablespoons green onions

The cooking ingredients

  • 2 teaspoons coconut oil
  • 3 tablespoons liquid aminos
  • 2 tablespoons rice wine

Instructions

  1. Heat 1 teaspoon of coconut oil in a pan over medium heat and scramble the eggs until barely cooked, then set aside.
  2. Increase the heat to high and add the remaining coconut oil and cooked quinoa, stirring until it begins to brown.
  3. Reduce heat to medium-high, add the carrot, garlic, frozen peas, liquid aminos, and rice wine, and cook for about 8 minutes until the carrots soften.
  4. Stir in the scrambled eggs and green onions, combine well, and remove from heat.
  5. Serve immediately, garnished with additional green onions if desired.
