Instructions
- Heat 1 teaspoon of coconut oil in a pan over medium heat and scramble the eggs until barely cooked, then set aside.
- Increase the heat to high and add the remaining coconut oil and cooked quinoa, stirring until it begins to brown.
- Reduce heat to medium-high, add the carrot, garlic, frozen peas, liquid aminos, and rice wine, and cook for about 8 minutes until the carrots soften.
- Stir in the scrambled eggs and green onions, combine well, and remove from heat.
- Serve immediately, garnished with additional green onions if desired.
