Ingredients

The base

  • 4 cups cooked quinoa
  • 3 eggs beaten eggs
  • 1 cup baby peas

The vegetables

  • 1 tablespoon avocado oil
  • 1 medium red onion, diced
  • 2 medium carrots, peeled and diced
  • 1 tablespoon fresh ginger, minced

The seasonings

  • ¼ cup soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes

For serving

  • to taste chopped scallions
  • to taste sesame seeds

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Beat the eggs and add them to the skillet, cooking until set.
  3. Transfer the eggs to a plate and chop them.
  4. Add the onion, carrots, soy sauce, and ginger to the skillet and cook for 5 minutes.
  5. Add the cooked quinoa, peas, sesame oil, salt, pepper, and red pepper flakes, cooking for 4 minutes.
  6. Add the chopped eggs and cook for an additional 2 minutes.
  7. Remove from heat and top with scallions and sesame seeds.
