Quinoa Fried Rice with Egg

Instructions
- Heat the oil in a large skillet over medium heat.
- Beat the eggs and add them to the skillet, cooking until set.
- Transfer the eggs to a plate and chop them.
- Add the onion, carrots, soy sauce, and ginger to the skillet and cook for 5 minutes.
- Add the cooked quinoa, peas, sesame oil, salt, pepper, and red pepper flakes, cooking for 4 minutes.
- Add the chopped eggs and cook for an additional 2 minutes.
- Remove from heat and top with scallions and sesame seeds.
