Ingredients

The base

  • 3 cups cooked quinoa
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 medium carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 tablespoons tamari (gluten-free soy sauce)
  • ½ cup frozen peas
  • ½ teaspoon fine sea salt

Optional ingredients

  • 2 large eggs
  • 1 teaspoon toasted sesame oil
  • 2 green onions, chopped

Instructions

  1. Heat olive oil in a skillet over medium-high heat and sauté onion and carrots until tender.
  2. Add garlic and ginger, stir for 1 minute, then add tamari, quinoa, frozen peas, and salt, stirring until warm.
  3. If using eggs, create space in the pan, crack eggs in, and scramble until cooked, then mix into the quinoa mixture.
  4. Stir in toasted sesame oil and green onions, adjust seasonings to taste, and serve warm.
