Instructions
- Heat olive oil in a skillet over medium-high heat and sauté onion and carrots until tender.
- Add garlic and ginger, stir for 1 minute, then add tamari, quinoa, frozen peas, and salt, stirring until warm.
- If using eggs, create space in the pan, crack eggs in, and scramble until cooked, then mix into the quinoa mixture.
- Stir in toasted sesame oil and green onions, adjust seasonings to taste, and serve warm.
