The sauce

reduced sodium soy sauce

creamy peanut butter

Instructions
- Cook quinoa with water in a pot, bringing to a boil, then simmer for 15 minutes and fluff.
- Mix sauce ingredients in a bowl and set aside.
- Heat oil in a large pot, sauté onion for 3 minutes, then add garlic and ginger for 1 minute.
- Add broccoli slaw, peppers, and edamame, sauté for 5 minutes.
- Add bok choy and sauté for another 2 minutes.
- Turn off heat, combine cooked quinoa and sauce with veggies, and season to taste.
- Serve hot or cold, topped with green onions and peanuts if desired.
