Thai Quinoa Fried Rice

Ingredients

The fried rice

  • 2 cups dry quinoa
  • 3 cups water
  • 1 tbsp coconut or extra virgin olive oil
  • 1 medium yellow onion, diced
  • 2 tsp minced garlic
  • 2 tsp minced ginger
  • 2 cups broccoli slaw
  • 1 ½ cups sliced bell pepper
  • 1 cup edamame
  • 2 baby bok choy, chopped

The sauce

  • ½ cup reduced sodium soy sauce
  • 3 tbsp creamy peanut butter
  • 1 tbsp toasted sesame oil
  • 3 tbsp pure maple syrup
  • ½ large lime, juiced
  • 1 tsp sriracha
  • 1 pinch red pepper flakes

Optional toppings

  • to taste green onions
  • to taste peanuts

Instructions

  1. Cook quinoa with water in a pot, bringing to a boil, then simmer for 15 minutes and fluff.
  2. Mix sauce ingredients in a bowl and set aside.
  3. Heat oil in a large pot, sauté onion for 3 minutes, then add garlic and ginger for 1 minute.
  4. Add broccoli slaw, peppers, and edamame, sauté for 5 minutes.
  5. Add bok choy and sauté for another 2 minutes.
  6. Turn off heat, combine cooked quinoa and sauce with veggies, and season to taste.
  7. Serve hot or cold, topped with green onions and peanuts if desired.
