Ingredients

The quinoa

  • 3 cups cooked and cooled white quinoa

The sauce

  • 4 Tbsp coconut aminos
  • 1 Tbsp maple syrup
  • 1 Tbsp almond butter
  • 2 Tbsp lime juice
  • 2 tsp chili garlic sauce
  • ¼ cup diced green onion

The vegetables

  • 1 Tbsp sesame oil
  • 1 cup finely chopped carrots
  • 1 cup chopped broccoli
  • 1 cup chopped green onion
  • cups chopped broccoli
  • ½ cup roasted cashews (optional)

Instructions

  1. Prepare quinoa if not already done, then cool it in the refrigerator.
  2. Mix all sauce ingredients in a bowl and adjust flavors as needed.
  3. Heat sesame oil in a skillet over medium-high heat, add carrots and part of the coconut aminos, and cook for a few minutes.
  4. Add green onion, broccoli, and cashews, then cook until broccoli is slightly browned.
  5. Stir in the cooked quinoa and the remaining coconut aminos, cooking for a minute.
  6. Add the sauce and stir-fry for another 4-5 minutes until quinoa is crispy.
  7. Serve hot, garnished with extra cashews, lime wedges, and green onion.
