Instructions
- Prepare quinoa if not already done, then cool it in the refrigerator.
- Mix all sauce ingredients in a bowl and adjust flavors as needed.
- Heat sesame oil in a skillet over medium-high heat, add carrots and part of the coconut aminos, and cook for a few minutes.
- Add green onion, broccoli, and cashews, then cook until broccoli is slightly browned.
- Stir in the cooked quinoa and the remaining coconut aminos, cooking for a minute.
- Add the sauce and stir-fry for another 4-5 minutes until quinoa is crispy.
- Serve hot, garnished with extra cashews, lime wedges, and green onion.
