Ingredients

The Cauliflower

  • 1 head cauliflower
  • 3 Tbsp water

The Sauce

  • 1 tsp sesame oil or coconut oil
  • 2 Tbsp almond or peanut butter
  • 4 Tbsp coconut aminos
  • 2 Tbsp lime juice
  • 2-4 tsp chili garlic sauce
  • 1 Tbsp minced fresh ginger
  • 1 Tbsp maple syrup
  • 1-2 Tbsp water

The Stir Fry

  • 1 Tbsp sesame oil or coconut oil
  • cups green beans
  • 1 medium bell pepper
  • 1 cup diced green onions
  • 1 cup thinly sliced red or green cabbage
  • ½-¾ cup roasted cashews or slivered toasted almonds

For Serving (optional)

  • to taste fresh cilantro
  • to taste lime wedges
  • to taste Sriracha or chili garlic sauce

Instructions

  1. Prepare the cauliflower rice and set aside.
  2. Mix the sauce ingredients in a bowl and whisk until combined; adjust flavors as needed.
  3. In a skillet, combine cauliflower rice and water, cover, and steam until tender.
  4. In a separate skillet, heat oil and add green beans, cooking with a lid for a few minutes.
  5. Add bell pepper, green onion, and cabbage, then stir and sauté until tender.
  6. Combine the cashews and cauliflower rice with the vegetables.
  7. Pour in the sauce, increase heat, and cook until everything is hot and well combined.
  8. Serve with optional garnishes like cilantro and lime.
