Ingredients

The base

  • 1 head cauliflower
  • ½ cup onion, chopped
  • 2 cloves garlic, minced
  • 1 small jalapeño, chopped (optional)

The flavoring

  • 1 Tbsp olive oil
  • to taste salt and pepper
  • Juice of 1 lime
  • cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté the onion for 3 to 4 minutes.
  2. Add garlic and jalapeño to the skillet and sauté for an additional minute.
  3. Increase heat to medium-high and add riced cauliflower, seasoning with salt and pepper.
  4. Cook until the cauliflower is soft and tender, about 5 to 7 minutes, stirring frequently.
  5. Remove from heat and mix in lime juice and cilantro before serving.
