Ingredients

The rice

  • 1 large head cauliflower

The seasoning

  • 2 teaspoons coconut oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ lime juice

Instructions

  1. Cut the cauliflower into manageable florets.
  2. Pulse the florets in a food processor until they resemble grains of rice.
  3. Transfer the riced cauliflower to a paper towel and squeeze to remove excess liquid.
  4. Heat coconut oil in a skillet over medium-high heat.
  5. Add garlic and stir until fragrant.
  6. Add the riced cauliflower, salt, pepper, and lime juice, stirring to combine.
  7. Cook until the cauliflower begins to brown slightly, about 3 to 5 minutes, then remove from heat and serve.
