Ingredients

The cauliflower

  • 1 large cauliflower

Cooking ingredients

  • 1 tablespoon oil (grapeseed or olive)
  • to taste salt
  • to taste pepper
  • 2 tablespoons water or veggie broth (optional for steaming)

Instructions

  1. Remove the leaves from the cauliflower and break it into large florets, then rinse well.
  2. Drain the florets in a colander or pat dry with a paper towel.
  3. Grate the florets using a box grater or process them in a food processor until finely chopped.
  4. Heat a large skillet over medium-high heat and add the oil.
  5. Once the oil is heated, add the cauliflower rice and cook for about 5 minutes until softened and slightly golden.
  6. Season with salt and pepper to taste.
  7. Optional: Add chopped onion or minced garlic before the cauliflower, or stir in herbs or lime juice after cooking.
  8. For steaming, add water or broth to the skillet, cover, and cook until tender, about 2 minutes.
