Cauliflower Rice

Ingredients

The base

  • 1 large head cauliflower

The cooking oil

  • 1 tablespoon extra virgin olive oil or coconut oil

Seasonings

  • to taste garlic powder or other seasoning
  • to taste salt
  • to taste pepper

Instructions

  1. Wash the cauliflower and remove the green leaves.
  2. Cut the cauliflower in half and remove the core.
  3. For the box grater method, chop the cauliflower into large chunks and grate using medium-sized holes.
  4. For the food processor method, chop the cauliflower into small florets and pulse in the food processor until it resembles grains of rice.
  5. Sauté the riced cauliflower in a large skillet over medium heat with the oil.
  6. Cover with a lid to steam and cook for a total of 5-8 minutes, then season as desired.
