Ingredients

Cauliflower Rice or Grains

  • 3 cups cauliflower rice

Tofu

  • 1 cup extra firm tofu
  • 1 Tbsp coconut aminos
  • 1 tsp chili garlic sauce (optional)
  • 2 tsp sesame oil

Sauce

  • 2 Tbsp peanut butter
  • 2-3 Tbsp coconut aminos or tamari
  • 1 Tbsp maple syrup
  • 1 Tbsp lime juice
  • 1-2 tsp chili garlic sauce

Stir-Fry Vegetables

  • 2 tsp sesame oil
  • 1 cup chopped shiitake mushrooms
  • 1 cup thinly sliced red cabbage
  • 1 cup thinly sliced red bell pepper
  • 2 cloves garlic, minced
  • ¼ cup thinly sliced green onion
  • 1 Tbsp fresh minced ginger

For Serving (optional)

  • lime wedges
  • fresh cilantro, chopped
  • peanut sauce
  • chili garlic sauce or sriracha

Instructions

  1. Prepare cauliflower rice or cook grains such as rice or quinoa.
  2. Marinate tofu with coconut aminos and chili garlic sauce, then set aside.
  3. Mix all sauce ingredients in a bowl and adjust flavors as needed.
  4. Heat a skillet over medium-high heat, add sesame oil, and cook marinated tofu until browned, then set aside.
  5. In the same skillet, sauté mushrooms, cabbage, and bell pepper until tender.
  6. Add garlic, green onion, and ginger, and cook for an additional minute.
  7. Move veggies to one side and add cauliflower rice or cooked grains to the other side, cooking until slightly browned.
  8. Return tofu to the skillet, add sauce, and stir-fry until everything is hot and well combined.
  9. Serve with optional garnishes like lime wedges and cilantro.
