Almond Butter Tofu Stir-Fry

Instructions
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Press the tofu to remove excess moisture, then cut it into small cubes and arrange on the baking sheet.
- Bake the tofu for 25-30 minutes until puffy and slightly crispy.
- In a mixing bowl, combine half of the sesame oil, tamari, maple syrup, almond butter, lime juice, and chili garlic sauce. Whisk to combine and adjust flavors if needed.
- Add the baked tofu to the marinade and let it marinate for 5-10 minutes.
- Heat a skillet over medium heat and add the tofu, cooking until browned on all sides.
- In the same skillet, add the remaining sesame oil, green beans, and spicy peppers. Add some of the marinade and steam for about 4-5 minutes.
- Remove the lid, increase heat, and add the remaining marinade and tofu to the skillet. Cook for an additional 1-2 minutes.
- Serve hot over rice or cauliflower rice.
