Ingredients

Main Ingredients

  • 1 pound organic tofu or chicken, cubed
  • 2 tsp oil (sesame preferred)
  • 1 12-ounce bag broccoli slaw

Sauce Ingredients

  • 2 heaping tbsp almond butter (or peanut butter)
  • 2 tbsp reduced sodium soy sauce
  • 1 tbsp water
  • tsp minced ginger
  • 1 tsp minced garlic

Instructions

  1. Drain and press the tofu for at least thirty minutes.
  2. Heat oil in a large skillet over medium heat.
  3. Add cubed tofu to the skillet and cook for about 10+ minutes, flipping until browned on all sides.
  4. While the tofu cooks, combine sauce ingredients in a small bowl.
  5. Once the tofu is done, transfer it to a plate.
  6. In the same pan, add broccoli slaw and a few tablespoons of water, cooking until softened (about 5+ minutes).
  7. Pour the sauce over the broccoli slaw and add the tofu, mixing to combine.
  8. Season with salt and pepper, then serve.
