Almond Coconut Cauliflower Rice

Instructions
- Cut the cauliflower into small florets and rice it in a food processor.
- Toast the coconut and almonds in a dry skillet over medium heat until golden.
- Remove the toasted mixture and add coconut oil to the skillet.
- Cook the onion with salt and pepper until translucent, about 5 minutes.
- Mix coconut milk and water in a bowl.
- Add riced cauliflower, garam masala, ginger, and curry powder to the skillet.
- Pour in coconut milk and lime juice, then add the toasted coconut and almonds.
- Cook for an additional 4 to 5 minutes until the cauliflower is firm and the liquid is absorbed.
- Serve hot.
