Ingredients

The rice

  • 1 medium head cauliflower

The seasoning and cooking

  • 1 tbsp coconut oil
  • 1 small onion
  • ½ cup sliced blanched almonds
  • ½ cup unsweetened shredded coconut
  • ½ tsp himalayan salt
  • ½ tsp freshly ground black pepper
  • ½ cup full fat coconut milk
  • ½ cup water
  • 1 tsp lime juice
  • 1 tsp garam masala
  • ¼ tsp ginger
  • ¼ tsp spicy curry powder

Instructions

  1. Cut the cauliflower into small florets and rice it in a food processor.
  2. Toast the coconut and almonds in a dry skillet over medium heat until golden.
  3. Remove the toasted mixture and add coconut oil to the skillet.
  4. Cook the onion with salt and pepper until translucent, about 5 minutes.
  5. Mix coconut milk and water in a bowl.
  6. Add riced cauliflower, garam masala, ginger, and curry powder to the skillet.
  7. Pour in coconut milk and lime juice, then add the toasted coconut and almonds.
  8. Cook for an additional 4 to 5 minutes until the cauliflower is firm and the liquid is absorbed.
  9. Serve hot.
