Simple Cauliflower Rice

Ingredients

The base

  • 1 small cauliflower head, chopped coarsely or 16 ounces riced cauliflower
  • 2 tablespoons ghee, coconut oil, avocado oil, or fat of choice
  • 1 small onion, chopped finely

Seasoning

  • to taste Magic Mushroom Powder or Diamond Crystal brand kosher salt
  • to taste freshly ground black pepper
  • to taste Aleppo pepper (optional)

Instructions

  1. Process the cauliflower florets in a food processor until they resemble couscous or rice grains.
  2. Heat a 12-inch pan over medium heat and add your chosen cooking fat.
  3. Once the fat is shimmering, add the chopped onions and cook until translucent.
  4. Add the processed cauliflower to the pan and mix well with the onions and fat.
  5. Season the mixture with Magic Mushroom Powder (or salt), black pepper, and Aleppo pepper if using.
  6. Cover the skillet and cook for 5-10 minutes until the cauliflower is softened but not mushy.
  7. Taste and adjust seasoning as needed, then serve immediately or store in the fridge.
