Ingredients

  • 1 medium cauliflower
  • 1 Tbsp Pure Indian Foods Primal Fat Coconut Ghee
  • ¼ cup water or broth
  • ¼ tsp sea salt
  • 1–2 pieces green onions, chopped (optional)
  • to taste parsley, chopped (optional)

Instructions

  1. Trim leaves from the cauliflower and break it into small florets.
  2. Rinse the florets under cool running water and pat dry.
  3. Fit the food processor with the shredding or chopping blade, or use a box grater.
  4. Process the florets until they resemble grains of rice, being careful not to over-process.
  5. Heat a large skillet over medium-high heat and add coconut ghee.
  6. Once melted, add the cauliflower rice and sauté for 4-5 minutes, stirring frequently.
  7. Add water or broth, cover, and cook for an additional 3-4 minutes until tender.
  8. Stir in green onions and garnish with parsley if desired, then season with salt and pepper to taste.
