Instructions
- Trim leaves from the cauliflower and break it into small florets.
- Rinse the florets under cool running water and pat dry.
- Fit the food processor with the shredding or chopping blade, or use a box grater.
- Process the florets until they resemble grains of rice, being careful not to over-process.
- Heat a large skillet over medium-high heat and add coconut ghee.
- Once melted, add the cauliflower rice and sauté for 4-5 minutes, stirring frequently.
- Add water or broth, cover, and cook for an additional 3-4 minutes until tender.
- Stir in green onions and garnish with parsley if desired, then season with salt and pepper to taste.
