Golden Cauliflower Rice

Instructions
- Preheat the oven to 350°F and toast the almonds for 3-4 minutes.
- In a food processor, pulse the cauliflower until it resembles rice.
- Heat ghee or oil in a skillet and sauté the onions for 3-4 minutes.
- Add garlic, cauliflower, curry powder, and salt, cooking for an additional 4-5 minutes.
- Remove from heat and stir in almonds, currants, and cilantro.
