Ingredients

The base

  • 4 cups chopped cauliflower
  • ¼ cup ghee, avocado oil, or coconut oil
  • 1 medium yellow onion, chopped
  • 6 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon curry powder
  • ¾–1 teaspoon sea salt

The toppings

  • ½ cup currants
  • ½ cup chopped fresh cilantro
  • ½ cup raw slivered almonds

Instructions

  1. Preheat the oven to 350°F and toast the almonds for 3-4 minutes.
  2. In a food processor, pulse the cauliflower until it resembles rice.
  3. Heat ghee or oil in a skillet and sauté the onions for 3-4 minutes.
  4. Add garlic, cauliflower, curry powder, and salt, cooking for an additional 4-5 minutes.
  5. Remove from heat and stir in almonds, currants, and cilantro.
