Ingredients

The rice

  • 24 ounces riced cauliflower

The sauce

  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • 14 ounces canned coconut milk
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground black pepper
  • ¼ teaspoon crushed red pepper
  • 1 tablespoon fresh lime juice
  • 1 ounce unsweetened coconut flakes (toasted, for garnish)

Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add cauliflower and cook for 5 minutes.
  3. Stir in garlic and cook for an additional minute.
  4. Add coconut milk, salt, black pepper, and crushed red pepper.
  5. Cover and cook for 10 to 15 minutes until most of the liquid is absorbed.
  6. Uncover, toss with lime juice, and garnish with coconut flakes.
