Ingredients

The salad

  • 1 bunch curly kale
  • 1 teaspoon extra-virgin olive oil
  • 5 cups chopped romaine lettuce
  • 1 cup homemade croutons
  • 1 cup shaved Parmesan cheese or vegan Parmesan
  • 1 avocado diced (optional)
  • 1 cup roasted chickpeas (optional)

The dressing

  • 1 serving homemade Caesar dressing or vegan Caesar dressing

Seasoning

  • to taste sea salt
  • to taste black pepper

Instructions

  1. 1. Tear the kale into bite-sized pieces and place it in a large bowl.
  2. 2. Drizzle with olive oil and sprinkle with salt, then massage the kale until it wilts.
  3. 3. Add the chopped romaine and toss to combine.
  4. 4. Drizzle with half of the dressing and toss again.
  5. 5. Transfer the salad to a serving bowl and top with croutons and Parmesan.
  6. 6. Add more dressing, roasted chickpeas, and avocado if desired, then serve.
