Kale Caesar Salad

Instructions
- 1. Tear the kale into bite-sized pieces and place it in a large bowl.
- 2. Drizzle with olive oil and sprinkle with salt, then massage the kale until it wilts.
- 3. Add the chopped romaine and toss to combine.
- 4. Drizzle with half of the dressing and toss again.
- 5. Transfer the salad to a serving bowl and top with croutons and Parmesan.
- 6. Add more dressing, roasted chickpeas, and avocado if desired, then serve.
