Instructions
- Preheat the oven to 350°F.
- Line a muffin tin with liners or spray with coconut oil.
- In a large bowl, crack the eggs and add almond milk, whisking well.
- Chop the tomatoes, onions, basil, and bacon.
- Fill each muffin cup with arugula, tomatoes, onions, basil, and bacon.
- Bake for 20-25 minutes.
- Remove from the oven and add any desired toppings.
- Store in the refrigerator for up to one week or freeze for later.
