Ingredients

  • 12 pcs pasture raised, organic eggs
  • ¼ cup almond milk (or other non-dairy milk)
  • ¼ cup arugula
  • ½ cup organic baby tomatoes, halved
  • ¼ cup chopped basil
  • ¼ cup chopped red onion
  • 3 slices no sugar added bacon, chopped into small pieces

Instructions

  1. Preheat the oven to 350°F.
  2. Line a muffin tin with liners or spray with coconut oil.
  3. In a large bowl, crack the eggs and add almond milk, whisking well.
  4. Chop the tomatoes, onions, basil, and bacon.
  5. Fill each muffin cup with arugula, tomatoes, onions, basil, and bacon.
  6. Bake for 20-25 minutes.
  7. Remove from the oven and add any desired toppings.
  8. Store in the refrigerator for up to one week or freeze for later.
