Filling Vegan Overnight Oats

Ingredients

  • 1 cup old fashioned oats
  • 1 ¼ cups unsweetened vanilla almond milk
  • 1 tbsp chia seeds
  • 1 tbsp almond butter
  • 2 tsp pure maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 1 tbsp hemp seeds (optional)
  • tsp fine sea salt

Instructions

  1. Combine all ingredients in a mixing bowl or large liquid measuring cup.
  2. Whisk the mixture until well combined.
  3. Taste and adjust sweetness if necessary.
  4. Portion the mixture into 2 jars or containers.
  5. Cover and refrigerate for at least 4 hours or overnight.
  6. Stir before serving and enjoy cold, optionally with fruit and nut butter.
