10 Minute White Bean Artichoke Basil Toasts

Ingredients

The topping

  • 1 clove garlic
  • 1 14-ounce can chickpeas or white beans, rinsed and drained
  • a handful fresh basil
  • juice of one lemon
  • 1 cup canned or jarred artichoke hearts, drained
  • about 2 cups fresh baby spinach or other greens
  • salt and pepper to taste

The base

  • 10 pieces whole wheat bread, toasted
  • a generous drizzle good quality olive oil

Instructions

  1. Pulse the garlic, chickpeas, and half of the basil in a food processor until finely minced.
  2. Cut the remaining basil into ribbons and chop the artichokes.
  3. Toss the chickpea mixture with lemon juice, basil, olive oil, salt, pepper, and artichoke hearts.
  4. Adjust the mixture to taste.
  5. Add spinach or greens just before serving.
  6. Serve the mixture on toasted bread.
