Creamy Artichoke White Bean Dip

Ingredients

  • 1 14-ounce can artichokes, packed in water
  • 1 15-ounce can white beans, rinsed and drained
  • ½ lemon juiced (about 1 tablespoon juice)
  • 2 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • ½ 16-ounce jar roasted red peppers
  • ¼ medium red onion, finely diced
  • ¼ cup fresh basil, chopped (or 1 teaspoon dried)
  • ½ teaspoon black pepper
  • to taste salt

Instructions

  1. Drain the artichokes and chop them into small pieces, then add to a mixing bowl.
  2. In a blender, combine the white beans, lemon juice, and garlic. Blend while adding olive oil and reserved artichoke liquid until you achieve a thick dip texture.
  3. Transfer the blended mixture to the mixing bowl with artichokes.
  4. Drain and chop the roasted red peppers, then add them to the mixing bowl.
  5. Add the diced red onion and chopped basil to the bowl and mix gently. Season with black pepper and salt as desired.
  6. Serve immediately or chill before serving with crackers or vegetables.
