Creamy Artichoke White Bean Dip

white beans, rinsed and drained

juiced (about 1 tablespoon juice)

roasted red peppers

Instructions
- Drain the artichokes and chop them into small pieces, then add to a mixing bowl.
- In a blender, combine the white beans, lemon juice, and garlic. Blend while adding olive oil and reserved artichoke liquid until you achieve a thick dip texture.
- Transfer the blended mixture to the mixing bowl with artichokes.
- Drain and chop the roasted red peppers, then add them to the mixing bowl.
- Add the diced red onion and chopped basil to the bowl and mix gently. Season with black pepper and salt as desired.
- Serve immediately or chill before serving with crackers or vegetables.
